Ingredients:

AIR FRIED BRUSSELS
1 bag brussels sprouts, trimmed and quartered
3 tbsp avocado oil
1 tsp garlic powder
1 tsp onion powder
2 tbsp balsamic reduction
1 tbsp honey
Salt and pepper to taste
Fresh cilantro (optional)

BANG BANG SAUCE
½ cup plain Greek yogurt
½ cup light mayonnaise
¼ cup sweet Thai chili sauce
2 tbsp honey
½ cup sriracha
1 tbsp lime juice

ADDITIONAL INGREDIENTS
½ cup reduced fat Italian Blend Shredded Cheese or any reduced fat white cheese
4-6 La Tortilla Factory Zero Net Carb Tortillas

Directions:

  1. Preheat oven to 425 degrees.
  2. To make the air fried brussels, trim and quarter brussels and toss in all ingredients listed (minus the cilantro). Spray air fryer with a neutral oil and cook at 350 degrees for 8 minutes. Toss and cook for an additional 8 minutes.
  3. While brussels cook, make the bang bang sauce. Place in fridge and let chill.
  4. Once brussels are nice and crispy, remove from air fryer and toss with about 4 tbsp of the bang bang sauce. Add a handful of cilantro if desired. Reserve remaining sauce for dipping. 
  5. Drizzle the tortillas with oil and brush to coat. Bake for 5 minutes and remove from oven.
  6. To assemble, place brussels sprout mixture on half of the tortilla, sprinkle some cheese, and fold tortillas in half. Bake quesadillas for 5 minutes. Flip and bake an additional 5 minutes.
  7. Remove from oven and serve with remaining bang bang sauce for dipping.
