Power up your breakfast with this protein-packed breakfast burrito. Low in carbohydrates and high in fiber, it’s a perfect way to start the day and will keep you full until lunch.

Ingredients

Nonstick cooking spray
1 large egg and 2 large egg whites, lightly beaten
1 slice of turkey bacon, cooked and cut into 1/2-inch pieces
1 La Tortilla Factory Low Carb, High Fiber Tortilla, Made With Whole Wheat, Large Size
1/4 cup fresh salsa
1/4 cup (1 ounce) shredded light Cheddar cheese

Directions

Heat a nonstick pan over medium heat. Coat pan with cooking spray. Add eggs to pan. Cook, stirring to scramble, to desired consistency. Stir bacon into eggs.

Preheat griddle to medium-high heat. Warm tortilla 30-40 seconds on each side. Remove tortilla to plate.

Spoon egg-and-bacon mixture into center of tortilla. Top with salsa and cheese.

Fold two opposite sides of tortilla toward the center. Fold bottom of tortilla up and over filling. Tuck end of tortilla under the filling and gently pull back to tighten filling inside. Roll forward to end of tortilla.
