The SAFE Program is designed to replace most, if not all, audits with a single, comprehensive, annual audit, saving both time and money. The SAFE audit allows a facility to describe what they are actually doing, rather than be scored by compliance to an arbitrary set of quality indicators.

SAFE audit is a thorough description of a food production, handling or storage facility’s policies and practices, documented by a skilled auditing practitioner and communicated through a web based data management & reporting system that allows individual users of the audit to determine if the audited facility will meet their own standards. GMA-SAFE’s core competency is built upon (1) the fact that it does not discriminate among standards employed by the food industry throughout the world and (2) the reality that no single set of standards could ever be adopted worldwide that would simultaneously drive both safety and economic efficiency.

American Institute of Baking — The Highest Possible Rating — Superior — for 7 straight years! Masters of education and research in the science of baking, ingredients, nutrition and food safety, the American Institute of Baking (AIB) sets standards within the baking industry. We welcomed them to our manufacturing plant for an intensive food safety and sanitation inspection, and what do you know...they returned with glowing reports. Not only do we have the tastiest tortillas on your supermarket shelves, but with the highest possible rating from the AIB next to our name, you can rest assured that our tortillas are produced in the cleanest and most sanitary environments around. The National Aeronautics and Space Administration (NASA) has approved La Tortilla Factory’s Low Carb, High Fiber Whole Wheat Tortillas as part of their food system. Our product regularly travels on the space shuttles.

These voluntary standards go beyond the requirements of government laws and regulations in order to ensure public confidence.

Kosher Parve — Certified Kosher by the Orthodox Union. For over 80 years, the Orthodox Union has maintained the highest standard of kosher certification. Today, the OU supervises more than 400,000 products, making it the world’s most recognized and most trusted kosher symbol.
